Single Varietal Cider: Arkansas Black

‘Arkansas Black’, thought to be a seedling progeny of ‘Winesap,’ has taught us some lessons in timing. We aim to press it at peak ripeness, after a short duration of storage, and bottle it here quickly Pét Nat, just before fermentation ends, to finish in the bottle. If we get the timing right we have the tropical fruity freshness of fermentation along with the elegant fruit that comes only through waiting. A creation of apples and time.
